Francisco Roman is our executive chef. He has worked in the hospitality industry for over 26 years. He attended The Culinary Institute:CIA at Greystone Napa Valley and worked for Canteen Corporation for 11 years. He also worked at the University of California Riverside and Mission Inn. He has worked with SRC for 10 years. He is responsible for menu development, purchasing, catering events and more, and oversees 75 employees. He is always pushing his kitchen staff to be their best, coaching and mentoring culinary students and engaging with restaurant and banquet guests. He takes pride in helping his team win "Best Brunch" and "Best Fine Dining Venue" in the Inland Empire.
Assistant Director of Catering & Special Events
Ken is our assistant director of catering & special events. He has over 15 years of experience in the hospitality industry. He has developed a flair for creativity and is dedicated to quality and excellence. His goal is to make each event unique in its own way, always focusing on making his guest's vision a reality.
Brien Bejune is the General Manager at The Castaway San Bernardino. With 24 years of restaurant management experience, Brian has worked in every position the restaurant industry has to offer. He aspires to pass along what he has learned to help others grow by letting the staff try new things and always asking the team for a winning outcome.

Mary’s attention to detail and eye for the finer things has given her many successes in the special events and catering business for the last 30 years. Her hospitality industry achievements include: Outstanding Operational Award, Special Achievement Food and Beverage Team Award, Leaderships Excellence Awards, and the Ed Merrigan Award for National Association of Catering Executives.
Mary’s main responsibility is to oversee all special events at the Castaway Restaurant to ensure all events are the best of the best! Of course, the unpredictable obstacles that arise from time to time are challenges Mary not only meets, buts surpasses. She is happy to be a part of the Specialty Restaurants Family!
